Cinco de Mayo


















My family and I got together this past Sunday and we all brought Mexican themed dishes to be festive with Cinco de Mayo today. I got to be in charge of the dessert and made this amazing Mexican flan. I love everything flan and custard and creme brulee. You get me, right? Well for those who share in my love, here is the recipe:

FLAN-MEXICAN CUSTARD
Caramelize 2 tablespoons sugar and pour into pie plate. Put pie plat into a pan with 1/2-1 inch water.
In blender, beat:
6 eggs
1 can Eagle Brand milk
1 large can evaporated milk
1 teaspoon vanilla
Pour into pan. Bake at 350 degrees for 45 minutes. Cool and invert onto platter. Caramel will flow down over sides. Serves 8

yummmy...we love flan at out house...before we moved to reno my parents had an ummm i think argentine neighbor...so we have an authentic recipe from her....yummmy! but where are the pictures of the family enjoying it?

Actually, with as much as Marleen and I enjoy this recipe, it doesn't quite serve 8 like it says. More like 2 or 3 if you know what I mean.
